The variety of wheat that we are eating now is far different from more than 60 years ago. In the olden days, there was no such thing as gluten intolerance. If there were, wheat and other grains would have been eliminated from our diets a long time ago.
Gluten is not the cause of sensitivity, but the variety of wheat that has changed since the 60s. Before eliminating gluten completely, try ancient grains such as spelt, kamut and einkorn which have been passed down since thousands of years ago.
