Polenta Radish Carrot Cake

Ingredients
4 cups water
1 cup Natura e Alimenta Organic Biodynamic Polenta Bramata
¼ cube Naturgreen Vegetable Broth
2 cup Daikon(White Radish), shredded
1 cup Carrot, shredded
1 small Fresh Ginger, chopped
3 pcs The Bites Dried Shiitake Mushroom, soaked and chopped
5 pcs The Bites Dried Black Fungus, soaked and chopped
½ teaspoon Gourmet Chinese Five Spice Powder
1 teaspoon The Bites Sea Salt
½ teaspoon Sonnentor White Pepper Powder
½ medium onion / 2 shallotfs, chopped and fried (optional)
Ulam Raja leaves, Scallions or coriander for topping
salt and pepper to taste

- Coriander Chili Sauce:
1 bunch of Coriander, chopped
1 clove of Garlic, chopped
1 tablespoon Meraki Brown Rice Vinegar
1 tablespoon Earthist Light Soy Sauce
1 teaspoon The Bites Chili Powder (adjust according to your taste level)
2 tablespoon Emile Noel Cooking Oil/Toasted Sesame Oil, warmed up
Directions
- In a small bowl, soak the Dried Mushroom and Black Fungus until softened. Set aside, drain well and cut both into really small cubes.
- Peel all the skin of Daikon and then use a shredder to finely shred the radish. Transfer the shredded radish in a large pot, spread salt on the surface and rub with hand. Set aside for around 20-30 minutes until the radish shreds are totally softened. Squeeze the water out and keep aside.
- In a pan, add around 5 tablespoon cooking oil and then fry ginger and mushroom until fragrant. Add black fungus, radish shreds, carrots shreds and Chinese Five Spice Powder, salt, and white pepper. Mix well and heat over medium fire till fragrant. Set aside.
- Boiled 4 cups water and vegetable broth in a pot then turn down the heat, pour in the polenta slowly and whisk evenly. Let it cook about 15 minutes. Add cooked radish shreds (step 3) and mix well.
- Brush some oil on the container and then transfer the polenta mixture to the container. Let it cool down about 10 minutes. You may bake it in oven with 180° C for about 25 minutes. Remove from oven and allow to cool for 5 or 10 minutes before serving. Cut and serve with Coriander Chili Sauce.
- You may also serve it when it has solidified or cut into slices around 1.5 cm in thickness. Pan-fry until slightly brown on both sides. Sprinkle some Scallions and serve with your favorite tea.
- Coriander Chili Sauce : Put coriander, garlic, soy sauce, rice vinegar and chili powder in a bowl and pour the warmed-up oil over this mixture. Ready to serve.
