Almost all rice misos are made with polished rice but The Bites Organic Genmai Miso is made with organic brown rice because the hard outer bean of organic brown rice is highly resistant to any kind of mold or spoilage.
Our organic Genmai Miso undergoes a complex fermentation involving many kinds of enzymes and microorganisms.
